Cafés Especiales Corquin (CAFESCOR) is a certified-organic Fairtrade association of 131 producers founded in 2014. Members hail from several municipalities across the mountainous region, farming small parcels of fertile, loamy soil. Coffee is grown under shade trees that provide ample organic material for composting and fertilization, and the association maintains 455 hectares of Smithsonian-certified Bird Friendly habitat, important wintering ground for migratory species like the Black-and-white Warbler.

After picking, coffee is fermented for 15–18 hours, then washed once to remove the mucilage.
