This limited-release Kona coffee reflects a controlled and technical method in producing coffee that highlights the various creative possibilities in the processing phase. It’s a carefully crafted product from PCR’s own Equipment Tech, Eric, ensuring consistency and quality in every step from harvest to roast.
This roasted coffee comes from Makalei Estates at 1500′ elevation, grown on Yamagishi Farms. Hand-picked over two harvests in August and October 2024, only the ripest cherries were selected for this batch. Once harvested, the coffee was pulped the same day, then fermented for 24 hours. Malic acid was added to the fermentation tank to lower the pH and halt fermentation, a process that helps preserve the coffee’s clean, bright flavor profile. After fermentation, the beans were washed and dried until they reached a moisture content of 10.5%.
